Magnificent Muffins

Magnificent Muffins
We all have come to love breakfast foods, especially when it comes to the sweet stuff! But let’s face it most of those sweet treats are exceedingly full of fat, carbs and sugar! It is always my goal to make treats that not only taste delicious but won’t affect our waistlines. Since we all have different favorites when it comes to muffins I chose three of the most common muffins and converted them into a slim trim fitness friendly guiltless treats♥. These recipes will only yield 6 muffins since we don’t want to mow down a dozen muffins in one day haha, believe me I have done some damage while baking! Let us just considerate it precautionary action against our inner fat kid ♥.

Dairy Allergy? Use a plain non-dairy yogurt (soy, coconut, almond) and squeeze half a small lemon into ½ C of the yogurt and mix well. Continue with the recipe as stated subbing your yogurt mixture for the sour cream. Note - This will change your nutrition information.

Skinny Grocery List:
Ingredients for all 3 –
½ C Stevia (You can use Splenda Note: it does change the nutrition)
1 C Rolled Oats Flour (We will be making our own Flour so pick up 1 – 1.5 C Rolled Oats)
½ C Fat Free Sour Cream (I chose Knudsen’s since it is all natural – Made from Happy Cows )
1 Egg White (large)

1 Whole Egg (large)
¼ C All Natural Soda (I Chose Hansen’s Diet Black Cherry since it is natural and sugar free, feel free to use Diet 7up or Fresca Mmmmm)
¾ Tsp. Baking Soda
½ Tsp. Sea Salt (Regular table salt is just fine)

1 Tsp Vanilla Extract
Powerful Pumpkin Muffins –
            Add to Skinny Grocery List
                        ½ C Pumpkin Fluff (I like to use Libby’s because once again it is all natural )
                        ¼ Tsp. Nutmeg
                        ¼ Tsp. Cinnamon
**Note: When adding Nutmeg or Cinnamon a Mill (Grinder) makes a huge difference in taste!
If you have the time to grind your spices go for it, but it is not a must.
Blissful Blueberry –
            Add to Skinny Grocery List
                        ¾ C Blueberries
                        1 Tsp. Vanilla Extract
Buff Banana –
            Add to Skinny Grocery List
                         ¾  approx 7” (Medium) Banana
                        ¼ Tsp. Nutmeg

                        ¼ Tsp. Cinnamon

If you ever have an over-ripe batch of bananas save them!
Throw them in the freezer for Banana Bread, Cookies or Muffins.
All you have to do is throw them in the microwave on defrost!


Tools to Tackle our Muffins:
Blender
Measuring Cup
Measuring Spoons
Medium Mixing Bowl
Small Bowl
Spatula
Muffin Pan
Muffin Cup Liners (Optional – You can grease the pan or Coat it with flour so they don’t stick)
Whisk (If you don’t feel like whisking, use a mixer)


I love to use fun colored cup liners!

Directions to these Little Delectable Delights!:
Preheat Oven to 350 Degrees
Measure out a heaping Cup of Rolled Oats and Pulse in the blender on high until they are powder and have flour like texture

1) Heaping Cup of Oats 2) Pulse until it reaches a flour texture
3) Measure Sour Cream and Baking Soda 4) Mix and Set Aside to Rise

In your small bowl mix Sour Cream and Baking Soda, Stir and Set aside (Leave enough room for the mixture to rise)
In your medium bowl cream together egg, egg white, Stevia, Soda, Sea Salt, Vanilla Extract and Oat Flour, Mix Well


5) Add Egg and Egg White 6) Whisk
7) - 8) Add Stevia, Salt, Vanilla Extract, Soda and Oats

Add your chosen muffin ingredients and your sour cream and baking soda mixture to your medium bowl, Mix well


9) Mix Well
10) This is what the Sour Cream and Baking Soda/Powder Should Look Like
11) Add Sour Cream Mixture to Batter and Mix Well
If you have not chosen to use muffin cup liners spray your pan with nonstick spray or coat with flour
If you did use muffin cup liners place one in each muffin cup area ♥

Add Your Chosen Flavor and Mix Well
This is what your Batter Should Look Like :)
Put your muffin Cups in Place!

Portion out your batter evenly (yields 6 muffins)
Bake on the middle rack
                        Banana - 20-22 Minutes
                        Pumpkin - 23-25 Minutes
                        Blueberry - 21-23 Minutes

Clean up and get ready for some muffin goodness!
Remove muffins from oven, check that they are cooked through

            Best way to check that cakes and breads are fully cooked is to take a knife and poke it directly down into the middle of the baked good, if it comes out clean (no batter) then it is cooked through ♥ Try it out!

If they are cooked through let them cool….after they are cooled off and edible Enjoy! Yummm Mmmm Mmmm!

A How to on Building a Bun-less Bird Burger! J
I enjoy this recipe because it is easy and you can have leftovers for a few days! I like to mix up my turkey burgers adding different veggies and sauces but I love this combo best. This is also perfect for cooking out (BBQ-ing) on a hot day since the tomato and lettuce are so refreshing. I am once again using goat cheese because the nutrition is better and it has a great flavor! If you have time pick up a nice stone ground or Dijon mustard to spice this up a bit and remember if you add ketchup it has a lot of sugar so if you can, skip it today J.

Skinny Grocery List:

Burger-
20oz Package of 99/1 Jennie-O Ground Turkey
½ Tbsp. Minced Garlic
¼ Tsp. Sea Salt
¼ Tsp. Black Pepper
1 Lg Egg White
¼ C Chives (Green Onions)
1 Medium Jalapeño
Wrap / Toppings-
The toppings are all optional, if you don’t care for Goat Cheese but love Cheddar, go for it! Just remember to adjust the nutrition if you change the suggested toppings J
4oz Package Goat Cheese
1 Small Head Iceberg Lettuce
1 Hot House (Sandwich) Tomato
1 Small Red Onion
Dijon / Stoneground Mustard
Burger Builder Tools:
Don't forget to heat up your Grill :)
Medium Mixing Bowl
Cutting Board
Knife for Cutting your veggies
Spatula for Flipping your Burgers
A grill or Foreman
Measuring Spoons
Measuring Cup
Spoon to mix your Burgers
Your Mitts to patty up those delish burgers!
Directions to Burger Goodness:
Remove Cheese from refrigerator so it can reach room temperature
Heat Up Grill
Place your egg white into your mixing bowl and add Pepper and salt and stir
Cut your chives (Green Onions) and measure out ¼ Cup
1) Place Egg White in Mixing Bowl 2) add Pepper, Salt and minced garlic - Mix well
3) Chop 1/4 C Chives 4) Chop and remove seeds in Jalapeño
Slice your Jalapeño, remove all seeds and cut into small pieces, add jalapeño and chives into egg mixture and mix well
Add Ground Turkey to bowl as chunk and mix well
5) add Chives and Jalapeño to you mixture 6) Mix well
7) Add Turkey in Sections 8) Mix Well
Patty Burgers into 4oz Patties, you should have 5 burgers
Lower Grill to Medium to Medium Low heat
9) Patty Burgers into 4oz Patties 10) Lower heat on your grill, spray with Non-stick and Place burgers on lower rack
11) Remove lettuce Stem and Rinse Well 12) Create Lettuce Boats by removing leaves one at a time
Spray Grill with non-stick spray (CAUTION FLAMABLE!)
Place patties on the grill and shut lid
While burgers are cooking let’s prep our veggies
Remove the stem of the Lettuce and run water into the stem hole and rinse well, flip into strainer to drain
Now Remove 5-10 Leaves (Boats) of your lettuce to wrap your burger in, reassuring each is rinsed well
After 5-8 minutes Flip Burgers
Slice your tomato and onion cutting enough for 5 burgers
Slice 4oz of Goat cheese into 5 equal parts

13) After 5-8 Minutes Flib Burgers 14) Prep Veggies and Cheese
15) Remove Burgers and Check Doneness 16) Pardon me do you have any Grey Poupon? No but I have organic Dijon ♥

After 5-8 Minutes remove burgers from grill, check the middle to make sure they are cooked through (no pink).
Turn off your grill and clean up!

1) Place Burger in Lettuce Boat 2) Add Cheese Mmmm I love Cheese
3) Add Tomato 4) Add Onion


5) Add Sauce 6) Fold Carefully

Awesome Almond Crusted Chicken

Awesome Almond Crusted Chicken
 No Batter - No Butter - No Big Deal

Let’s face it, when eating clean we eat way too much a lot of chicken, we eat a lot of good fats I miss butter so why don’t we skip a step and eat our good fats with our chicken! I know nuts and croutons are good in salads or by themselves but they are also oh so delicious as a batter for chicken! Think back…when was the last time you had battered chicken?! Exactly! A way too long time I am sure! This recipe is fairly quick to make and pretty easy too! Ok time to hit the kitchen and get cookin’!

Skinny Grocery List:
Make a list and check it twice J
16oz Chicken Breasts (remove all fat and skin…yuck!) - I Buy 1.25lbs because when you remove the fat it will come to roughly 16oz
5oz Almonds (I chose sliced for my laziness easier prep)
1 Tbsp. Minced Garlic – YUM
Sea Salt to Taste
Black Pepper to Taste
2 Egg Whites (This is the Glue that will hold it all together!)
Non-Stick Spray
I Like Minced Garlic but Garlic Salt works too ;)

Utensils:
Baking Sheet
Foil (optional…Easier Clean Up aka Laziness)
Tongs (I use my hands to wash and coat the chicken but that's up to you)
Mixing Bowl (You will need to roll the chicken in this bowl to pick size accordingly)
Shallow Dish (We will put our Batter in here so make sure you can roll you chicken in it)
Cutting Board
Knife (For cleaning the chicken breast…No Fat!)
Blender
Measuring Spoons
Food Scale (This is so you can weigh out your almonds, most of the time 5oz Almonds is approximately 1 Cup but please try to weigh your food if you have the option )
Cover your Baking Sheet with Foil for Easy Clean Up!

Directions to your Awesome Almond Chicken:
Preheat your oven to 375 Degrees
Clean your Chicken and set aside
Weigh out 5oz of almonds and place in blender
Pulse until almonds reach a coarse texture
Add Garlic, Salt and Pepper and pulse into fully mixed
Set Mixture aside in a shallow dish
1) Weigh Almonds and Place in Blender 2) Pulse until Coarse
3) Add Garlic, Sea salt and Pepper 4) Place in Bowl

In your mixing bowl whisk two egg whites until they reach stiff peaks

1 - 2) Pictured: Clean Chicken - Removed Fat and Skin
1) Place Egg Whites in Bowl 2) Whisk until eggs reach stiff peaks

Wash (coat) Chicken with Egg Whites then Coat with Nut Mixture, Repeat once more (Chicken should be coated twice)


1) Wash Chicken in Egg Whites 2) Coat with Almond Mixture
3) Both Sides ;) 4) Repeat in Egg Whites

Finish in Almond Mixture - Place on Pan Sprayed with Non-Stick
Spray the top of your chicken too to add a little crispiness to it
Middle Rack as Always - For Even Baking

Lay foil on pan (Optional) and spray with non-stick spray
Lay chicken flat on sheet and bake at 375 degrees for 25-30 minutes
Clean up and get ready for some finger lickin’ chicken! (This comment was so corny it made me laugh! HaHa)
Check the center of the chicken to assure they are fully cooked (no pink)
If your center is cooked through remove from the oven and let it cool
If it is cooked through and looks Crisp and Delicious...It is done!
Let's Eat!!
